Corn Bread

Makes about 14 squares:

1 cup unbleached white flour
½ teaspoon salt (optional)
4 teaspoons baking powder
1 cup cornmeal
½ cup honey
2 egss
¼ cup sunflower oil
1 cup buttermilk or sour milk

o Sift together in a bowl, the flour, salt, baking powder, and the cornmeal. Then add the honey, eggs, and the oil. Add the buttermilk or sour milk and beat until just smooth.

o Pour into a greased 9 x 9-inch baking pan and bake at 400 °F. for 15 to 20 minutes.

o Cut into squares and serve warm.
