Tiramisu Cheesecake

Serves 6-8

16 oz package Cream Cheese
1/2 cup white Sugar
1/2 tsp Vanilla extract (or 5 grams Vanilla sugar)
3 small to medium Eggs*
2 Tablespoons liquor of your choice (Kahlua, TiaMaria, etc)
1-1/2 dozen Lady Fingers
1/2 cup *very* strong coffee
1 cup whipped cream
1/4 cup mixture Dutch Cocoa & Espresso instant coffee

*Eggs should be preferable at room temperature.

Mix together in a bowl, with a mixer at medium speed: Cream cheese, 
sugar, liquor of choice, and vanilla until well blended.  Add the eggs 
one at a time.  Mix everything together very well until creamy & smooth.

Organize lady fingers at bottom and to the sides of a 8-10" baking dish and 
drizzle generously with the very strong black coffee.

Add the Tia Maria to the cheese mixture.  Pour into the baking dish.  Bake 
at 340° for about 50 minutes.  Let cool and rest (covered) in the 
refrigerator for about 2 hours or overnight is better.  Garnish with the 
whipping cream or cool whip and sprinkle generously with the dutch 
cocoa/espresso mixture just before serving.  

For variety and on a hot day, add ice cream to it when its out the oven
for 10 minutes.  Garnish as above + some fresh fruit.
