Tony's Mixed Bean Soup


Ingredients:

2    packages stewing beef
1    lb variety of dried beans
1    can kidney beans, don't drain
1    large onion, thinly sliced
1    parsley
1/2  cellery root
1    large potatoe, cubed
5    cups vegetable or beef stock
2    cloves garlic, chopped
1    bay leaf
-    salt & fresh ground pepper to taste


Saute chopped onion and garlic in oil.   Keep the juice/oil.  Set aside.  
Cut all pieces of stewing beef in half.  Saute stewing beef in hot oil (quickly) 
until all sides are browned (Beef remains raw inside). Keep the juice/oil.  
Set aside.
Season both onions and beef with a bit of salt/pepper before you saute.

If you don't have beef or vegetable stock, add 2 bouillon cubes to 5 cups of 
warm water.  Add the left-over juices from saute and browing the beef cubes.

In a crockpot, add all the ingredients (in layers) as they are listed above.
Put the sliced onions at the bottom first, then the beef, then the rest.
Cook on high for 4 hours then on low for 9 hours, or whenever done.  
Stir occasionally.
