Haagse Bluf (Dutch)


Ingredients:

5 egg whites
130 grams sugar
400mL red currant juice
6 biscuits (Dutch: beschuit)

Separate the egg yolks from the whites.  Beat the egg whites
with the sugar until stiff.  Gradually add the red currant juice
while still beating the whites.  (The red currant juice has to be
the thick kind, we buy ours from our local Dutch store).
You can serve this as follows:
put a beschuit (biscuit) in a bowl and scoop the bluf on top or
serve on top of a 'grits' (semolina) pudding (Dutch: griesmeel pudding)
