Lamb and Apple Casserole


Ingredients:

2 lb      Middle neck lamb chops
2         Medium sized onions, chopped
2         Medium carrots, thinly sliced
1         Celery stick
2         Cooking apples
1 oz      All Purpose flour
          Salt and Pepper
2 Tbsp    Oil
3/4 pint  Stock (beef or veg.)

Add pepper and salt to the flour, coat the lamb-chops thoroughly.  Brown the 
chops on both sides in the oil and remove.  Cook the chopped onions in the
oil until soft and golden and put into the crockpot.  Work any remaining flour
into the fat, cook for about 2 minutes, and stir in the stock.  Bring to a boil, 
while stirring. Put the thinly sliced carrots, celery and apple into the crockpot.  
Put the chops on top and pour the thickened stock over that, seasoning to 
taste.  Cover and cook on HIGH for 45 minutes, then on LOW for 7 hours.
