Dutch Waffles

500 gram All Purpose Flour
8 eggs
200 gram melted butter
2 packages dry yeast
3/4 Liter warm milk
1 tablespoon Brandy (or your favorite liquor)
1 package vanilla sugar

Separate the egg yolks and egg white into separate bowls.

In a bowl add the flour, dry yeast and vanilla sugar. Stir in the warm milk and melted butter and then add the egg yolks one-at-a-time until the dough mixture is smooth. Let rise for 1 hour.

Then whip the egg whites until they have the consistency of whipping cream and add to the dough mixture. Add the tablespoon of brandy. Bake on a grill, waffle iron, or in a frying pan small size waffles.

Serve warm with sugar and cinnamon (if preferred). The waffles also serve as an excellent dessert with ice cream, strawberries and whipping cream.
