Ingredients:

2-1/2 lbs. Beef Sirloin, cut into strips about 1/2 inch thick, Salt
and Pepper to taste
1 stick real Butter, no-salt type, softened
5 green Onions, chopped (white part only)
5 Tbsp All Purpose Flour
12 Mushrooms, medium sized, do not drain
1-1/2 Beef Bouillon tablet, dissolved in 2 cups hot water
1 can Beef Consommé
1 tsp Mustard (no honey mustard!)
1/3 cup White Wine
1/3 cup Sour Cream
Takes as much fat from the beef as possible. Cut the beef in 2 inch strips
across the grain of the meat. salt and pepper the strips. Heat the butter
until almost melted. Brown the beef. Set the meat aside and cook the green
onions until they are transparent. Set the onions aside. Add the Flour to the
drippings and mix well. Add the beef bouillon and consommé to the meat. Stir
until mixture is smooth. Add the mustard, cover and cook very slowly for about
1 hour or until the meat is tender. Add the undrained mushrooms, white wine and
sour cream.
Serve over fried potatoes, rice or noodles.
